Butchering Bee at Joseph Schneider Haus Museum explores our culinary past

WATERLOO REGION - Experience an important part of our community’s culinary past at the Joseph Schneider Haus Annual Butchering Bee that takes place Saturday, Nov. 14, 10 a.m. to 5 p.m. and Sunday, Nov. 15, 1 to 5 p.m. at the historic house in downtown Kitchener.

Long-time local butcher Delford Schultz gives a special presentation to demonstrate traditional pork butchering techniques on Saturday, Nov. 14.

Patrons can sample a variety of sausage types, and learn about head cheese and Hogmaul while enjoying some hot apple cider. Demonstrations of traditional butchering techniques, sausage making and historic cookery take place throughout this special event.

Traditionally, the annual Butchering Bee ritual was a time for sharing hard labour, camaraderie, and a bountiful feast amongst neighbours. Everyone had a role in ensuring that nothing went to waste. Often considered the most important animal on the farm, the pig was a favourite with the Pennsylvania-Germans. Easy and inexpensive to raise, pork had an almost endless array of uses from bristles for brushes, fat for soap and sausage.

The Joseph Schneider Haus Museum is located at 466 Queen St. S. in Kitchener. Weekend hours are Saturdays 10 a.m. to 5 p.m. and Sunday 1 to 5 p.m. Admission is $15 per family, $6 plus per adult, $5 plus per senior, $4 plus per child. All prices plus HST.
